The first edition from Bannow Island uses barley grown by Ed Harpur on the extreme Southern coast of Co. Wexford where the salt-laden Atlantic winds and sandy soils create a unique and challenging terroir. For maturation 35% of the casks used were first-fill American oak , 20% were virgin American oak, 25% were French oak and 20% were casks previously used to age vin doux naturel (fortified wines). Light to medium honey coloured appearance; the glass is well-coated with very slow legs. Malty, very fresh red roses initially on the nose with milk chocolate. Warm vanilla custard and sweet dried fruit follow. Vibrant and exuberant on the palate with white pepper, spicy cloves with a dried sweetness of salted caramel, malted biscuits and sherry. An oily and dry finish. Only 8000 bottles have been produced, with only 1500 available in the UK.
