Producer OUR SOURCE IS WILD, NATURAL AND ORGANIC Like the coyotes that roam freely over northern Mexico’s arid Chihuahua desert, Sotol Coyote is the true essence of pure and natural wildness. It is handcrafted exclusively from 100% wild-growing and wild-harvested agavacea plants, a variety of the agave or maguey family. These plants are completely organic, growing naturally without the use of any herbicides, insecticides or fertilizers. And in this unforgiving desert climate, only the strongest and healthiest plants survive and are harvested to become Sotol Coyote. Wild grown prickly evergreen plants can take as many as 15 years to mature, storing vast amounts of natural energy before they are ready to be harvested by the “jimadores. ” And each huge and magnificent plant will produce but a single bottle of Sotol Coyote! HANDCRAFTED… 100% PURE AND NOTHING MORE The making of Sotol Coyote is equal parts art and science. Once the plant is harvested, it’s time for the experienced hands and palate of our Master Distiller to transform the heart or “pineapple” into the 100% pure magic that is Sotol Coyote. Relying on centuries of experience, it is one of the few drinks in Mexico that retains its ancestral method of preparation. It’s a meticulous and time-consuming process, but we wouldn’t have it any other way! Each heart is cleaned and then roasted in a pre-Hispanic underground stone oven. It is then hand ground and the nectar combined with water to begin fermentation. The product of this fermentation is then carefully double-distilled through a handcrafted copper still. There is no artificial flavoring or coloring of any kind added, nor is any necessary. SOTOL COYOTE STANDS APART FROM TEQUILA & MEZCAL Not unlike tequila, at this stage the distilled Sotol Coyote is brilliantly clear with clean, bright flavors, and can be bottled immediately as our Blanco (Joven or Young) Sotol. Our Sotol Reposado is aged for 3 months in oak barrels, and is pale yellow in color with flavors that are more complex. Although Sotol Coyote is a relative of both tequila and mezcal, it stands apart from tequila’s spicy bang and mezcal’s smokey hit with a bouquet of clean, fresh and vibrant herbs, and gentle layers of sweetness and floral notes. Every bottle of Sotol Coyote contains the distilled nectar of a 15 year-old plant, and provides a rich bouquet and unmatched flavor.
