The Caol Ila Distillery is a Whisky powerhouse, producing the largest amount of Single Malt on Islay. This fine Whisky, displaying youth and vibrancy, is a peat-lover’s dream. This boisterous spirit has been tamed with three freshly emptied barrels that previously matured deliciously sweet PX Sherry, from Bodegas Ximénez- Spínola, in Jerez, Spain. To fully showcase this youthful six year old peated Islay spirit, the maturation has been kept short. For its final seven months, this spirit has been matured in PX Sherry Hogsheads with the aim of introducing a delicate, fruity character to the heavy, smoky Islay personality. The aromas are lush and heady, with dried fruit and coastal bonfire notes. The smokiness continues on the palate with sweet peat, accompanied by mocha and dried orange. Gentle lingering smoke and fruits on the finish.
