The grapes from the manual harvest of our members are unloaded and immediately de-stemmed and crushed. Fermentation begins at a controlled temperature, maceration is carried out using the timed pumping over process, which lasts around 6 days with the aim of promoting smooth extractions. The wine ages briefly in deposits, being stabilized and filtered before bottling, which takes place within a maximum period of one year.
