Tasting Notes: Caramel, Butterscotch, Clove Hillrock Double Cask Rye stands as a distinctive American whiskey, meticulously crafted in limited quantities from naturally grown rye grain. The entire process—from cultivation and milling to small-batch pot distillation, aging, and hand bottling—takes place on our Hudson Valley Estate. Following maturation in new #3 char American oak casks, this Field-to-Glass® whiskey, celebrated for its accolades, undergoes an additional aging phase in #4 char new American oak casks. These latter casks contribute layers of caramel and vanilla that beautifully complement the traditional rye spice profile. The rich, deep golden amber hue of the Double Cask is a visual prelude to its enticing bouquet. Warm and welcoming aromas of vanilla and caramel, accented by hints of prune, apricot, and rye spice, create a well-rounded olfactory experience. The palate is greeted with an initial wave of caramel sweetness, followed by the nuanced interplay of mint, clove, and cinnamon spices.
