Their goal is to perfect their process in crafting the best possible whisky for enthusiasts and connoisseurs alike. Using 100% Canadian grains, they distil their spirits from scratch without any artificial colouring or additives. By fermenting at lower temperatures, they preserve the natural aroma of the grains. This slower fermentation process takes between 10 to 14 days, which in the industry, is considered to be a method of producing high-quality spirits. Sweet & spicy nose with aromas of dried apricots, brown sugar and a hint of vanilla. Warm banana bread, gentle oak spice and caramel. Smooth warm finish with long lingering notes of rye. Pair with grilled steak, lamb, aged cheddar, blue cheese, or dark chocolate.
